Your grandmother's milk grew a thick layer of malai. Thick enough to lift off with a spoon and save in a steel dabba all week, until there was enough to churn into white butter. Your packet doesn't do that. Same cows, more or less. Same country. So what changed?
Homogenization changed. And almost nobody explains it, because the difference between pasteurized and homogenized milk usually gets written up by machine companies who care about the machine, not by anyone who has watched a family stop making butter at home. Let's fix that.
The short answer
Pasteurization is heat. It kills germs so the milk is safe and lasts longer.
Homogenization is pressure. It breaks the fat into pieces so small they can't float, so cream never rises to the top.
One is about safety. The other is about looks. They aren't two options you pick between. They're two separate things done to the same milk on the same day, and most packet milk in India has had both.
Milk leaves a cow at around body temperature. That happens to be the perfect temperature for germs to grow. Pasteurization stops that. The milk is heated to a set temperature, held there for a set time, then cooled down fast. Germs die. The milk stays milk.
HTST, high temperature short time, is what most Indian dairies use. Milk runs through a heat exchanger, hits about 72°C, stays there roughly 15 seconds, then drops to 4°C or below. Faster than boiling a kettle.
Batch pasteurization is the old slow way. About 63°C for thirty minutes. Small dairies still run it.
UHT pushes milk to roughly 135–140°C for two to four seconds. That's why tetra packs sit on a shelf for months without a fridge. It also cooks the milk enough that you can taste it. UHT tastes faintly of biscuits to anyone raised on fresh milk.
One thing people get wrong: pasteurization doesn't sterilise. Some tough germs survive, which is exactly why the packet still says keep refrigerated and finish within two days of opening. What you lose is a little vitamin C and some B vitamins. Nobody drinks milk for those. Calcium, protein and fat come through fine.
No heat here. Pure pressure.
Milk fat travels in tiny balls. In normal milk they're about three to four microns wide. A micron is one thousandth of a millimetre, so they're already small, but big enough to float. Leave the milk standing and they drift up and join together into a cream layer. Malai.
A homogenizer forces milk through a very narrow gap at very high pressure, somewhere around 100 to 250 bar depending on the plant. That force tears the fat balls apart. They come out under one micron. Too small to rise, and they stay spread through the milk forever.
The milk turns evenly white, feels slightly thicker in the mouth, and never separates. That last part is the whole business reason. A dairy selling through thousands of shops can't have half its pouches looking spoiled because a yellow layer settled on top. Customers return them. So the fat gets crushed and the complaint disappears.
Homogenization adds nothing. It removes nothing. It rearranges.
Here's the running order inside a dairy, because it explains a lot. Raw milk arrives and gets chilled immediately, since every warm hour is germs multiplying. It goes through a clarifier, a fast-spinning machine that throws out dirt and stray cells.
Next is standardisation. A separator pulls all the cream off, then the dairy adds back a measured amount to hit the fat percentage printed on the packet. Three percent for toned. Six for full cream.
Then homogenization, which comes after standardisation because the fat has to be at its final level before you break it up. The homogenizer usually sits inside the pasteurizer on the hot side, since warm fat shears more easily than cold. Then the final heat hold, the fast chill, and into the pouch.
So by the time milk reaches a shop, both steps were decided by an engineer working to a shelf-life target. There's no version of that packet where you get the cream back.

Wrong question, and it's the one everybody types. Asking whether pasteurized or homogenized is better is like asking whether washing rice beats cooking it. Different jobs. You wouldn't skip pasteurization to get cream, because that's the safety step. You might skip homogenization, because that's the cosmetic one.
The useful question is pasteurized and homogenized, or pasteurized only? Pasteurized only wins if you want malai, make curd or paneer at home, plan to churn ghee, or just want the cream you already paid for. Pasteurized and homogenized wins if your milk travels a long way, sits in the fridge for days, or feeds children who refuse anything that looks separated.
Neither is unsafe. Both are pasteurized. That's the part that keeps you well.
This is where most Indian homes feel the difference without knowing its name. You buy toned milk, boil it, cool it, wait. A thin, mean little skin forms on top and tears the moment you touch it. Your mother remembers something else entirely: a proper thick pad of malai, collected over a week, churned into white butter, then simmered into ghee you could smell from the gali.
That milk wasn't homogenized. The cow didn't change. The processing did.
Once the fat is broken below one micron it can't join together and it can't rise. No cream layer means no malai. No malai means no home butter. No home butter means no bilona ghee. A whole kitchen tradition quietly ended because a machine solved a shop-display problem.
That's the reason we don't homogenize anything at Sunrise A2 Milk. We keep Gir and Tharparkar cows on a 25-acre farm near Jhotwara and deliver twice a day, morning and evening, so milk reaches a Jaipur kitchen within hours of milking. When milk moves that fast over that short a distance, there's no shelf-life problem to solve with a homogenizer, and no reason to take the cream away from the person paying for it. Leave a bottle standing overnight and the malai is waiting in the morning. A fair number of our customers took the free two-day trial purely to test that, which is honestly the only sensible way to judge any dairy claim.
Milk whose fat was left alone. Sometimes sold as cream top milk, because that's exactly what you see. Shake the bottle and it mixes back in. Don't shake it and the first glass is rich while the last is thinner. Some people find that annoying. Others pour the cream over fruit and consider it the best part of the day.
Non-homogenized isn't the same as raw. Non-homogenized milk can still be pasteurized, and most sold in cities is. You're skipping the pressure step, not the safety step.
Almost never in a regular shop. Big dairy pouches are homogenized by default. Your options are farm-direct delivery brands, which now run in most large Indian cities, or a local dairy selling loose milk you boil at home. Read the label or just ask. If a brand sells bilona ghee, its milk isn't homogenized, because bilona ghee can't be made from milk that won't give up its cream.

Going down that list, safety and shelf life climb while the cream disappears. That trade is the whole story of modern milk.
No, and these two words confuse people constantly. Whole milk, or full cream, describes how much fat is in it. Under FSSAI standards, full cream carries about 6% fat, standardised about 4.5%, toned about 3%, double toned about 1.5%, skimmed almost none. Homogenized describes what was done to that fat.
So full cream milk is almost always homogenized too. High fat and cream top aren't the same thing. You can buy 6% fat milk and never see a drop of malai on it.
Fat levels, nothing more. A dairy separates all the cream out, then blends a measured amount back to hit the number. Toned milk was originally toned down with skimmed milk powder and water to stretch supply, which is where the name comes from. None of these words tell you whether the milk was homogenized. Almost all of them were.
No. And this is the most common mistake in Indian kitchens. The habit made sense fifty years ago, when milk came loose from a dudhwala on a cycle and nobody knew what had happened to it on the way. It makes sense for raw milk today. It doesn't make sense for a sealed pasteurized packet, already heated hot enough to kill what boiling would kill.
Boil it anyway and you cook off more vitamins, slightly scorch the protein and change the taste. Plenty of people boil because they like that taste, or want the skin that forms. That's a preference, not hygiene. Raw milk, boil it. Packet says pasteurized, warming is enough.
If it's pasteurized, yes. Homogenization has nothing to do with safety, so skipping it changes nothing about whether the milk needs heat. If it's raw and unpasteurized, boil it either way. Almost no raw milk is homogenized anyway.
The honest answer is there's no good evidence it is. A theory floated decades ago claimed homogenization lets an enzyme called xanthine oxidase slip into the bloodstream and harm arteries. It got plenty of attention. It was never proven, and mainstream nutrition science doesn't take it seriously today. If a milk brand states it as fact, treat that as information about the brand rather than about the milk.
What can be said fairly is smaller. Homogenized fat has far more surface area, so it's digested a little differently. Some people say non-homogenized milk sits easier in their stomach. Plenty of others notice nothing. That's a personal response, not a health verdict. If milk genuinely upsets your stomach, the usual culprits are lactose or A1 beta-casein, and neither has anything to do with homogenization — there's more on that in is A2 milk good for digestion.
Yes, and it's worth being fair about them. It keeps longer without looking wrong. Every glass from the same packet tastes the same. Tea and coffee behave predictably. It sets a smooth, even curd, which matters if you're making forty trays of dahi in a restaurant. And it doesn't need shaking, which sounds trivial until you've watched somebody pour the last of an unshaken bottle and complain the milk is watery. For a family buying milk from a shop three days a week, homogenized milk is a sensible product. A logistics solution, not a scandal.
Two completely different things, and they get mixed up constantly. A2 refers to a protein. Most Indian native breeds, including Gir, Tharparkar, Sahiwal and Rathi, produce milk with A2 beta-casein. Many crossbred and European cows produce A1. Some people digest A2 more comfortably, which we cover in A1 vs A2 milk. Homogenized refers to the fat and how it was processed.
So you can buy A2 milk that's been homogenized, and many packaged A2 brands are. You can also buy A2 milk left non-homogenized, which is what a farm-direct dairy usually sells. The two labels answer separate questions, and a brand advertising A2 while quietly homogenizing is charging you a premium for a protein while removing the cream you could actually see.
Homogenized milk sets faster and gives smooth, even curd with almost no cream on top. Non-homogenized sets a little slower and gives firmer curd with a fat layer over it. Neither is wrong, and both count towards the benefits of eating curd daily.
Non-homogenized milk makes better paneer. The bigger fat balls get trapped in the curd when the milk splits, so the block is richer and holds together. Homogenized milk makes paneer that's drier and crumbles more.
Here it stops being a preference and becomes a hard limit. Bilona ghee starts with curd, which is churned to release butter, which is then simmered. That needs cream that will separate. Non-homogenized milk gives tea more body, because some fat comes to the surface as it heats. Homogenized gives a flatter, more even cup. Every tea stall owner has a firm opinion on this and most of them are correct.
Doctors generally say no cow milk at all under one year. After that, either type is fine. A paediatrician's advice beats anything on a milk website, including this one.
The overnight test
Pour a glass. Put it in the fridge overnight. Don't stir it. Look in the morning. A cream line on top means it wasn't homogenized. A perfectly even glass means it was.
Eight hours, zero cost, and more reliable than any label. Labels are supposed to say pasteurized, and Indian rules require it, but homogenization is often left off entirely because dairies don't consider it worth advertising. Three reasons, usually. Heat treatment shifts the flavour slightly. Homogenization changes the texture and how fat hits your tongue. And time - milk two hours old tastes nothing like milk two days old.
Paneer, yes, but it comes out drier and crumbles. Soft cheeses are fine. Firmer cheeses come out weaker because the curd doesn't knit as tightly. Bilona ghee is the one thing that's genuinely impossible.
No. A yellow layer on top is milk behaving exactly as it should. Milk that's actually gone off smells sour and turns lumpy, which is a completely different thing. Shake it and it mixes back in.
No. Nothing you do at home puts the fat back together. Once it's broken below a micron it stays broken, which is why no amount of boiling will produce malai on a homogenized packet.
Homogenization has no effect either way. Fat percentage does, so look at toned or double toned rather than at how the milk was processed. The word on the front about fat is the one that matters.
No. A2 is about the protein in the milk, decided by the cow's breed. Homogenization is about the fat, decided by the dairy. Plenty of packaged A2 brands homogenize. Ask before you pay a premium.
If your milk travels a long way, sits in the fridge for days, or feeds someone who refuses anything that looks separated, buy the packet. It's safe, cheap and honest about what it is.

The one thing I wouldn't do is pay extra for milk sold as premium, organic or desi that's been homogenized. Homogenization removes the single thing you could see, taste and use. Paying more for milk that hides its own cream is the strangest deal in the dairy aisle, and most people are making it without knowing there was a choice.
